Recipe for the delicious Vietnamese dish Banh Xeo

Introduction to Banh Xeo

Banh Xeo is a popular Vietnamese dish that is loved for its crispy texture and rich, savory flavors. This traditional Vietnamese pancake is made with a rice flour batter, filled with a tasty combination of shrimp, pork, bean sprouts, and green onions. Served with fresh lettuce and herbs, dipped in a tangy fish sauce, Banh Xeo is a delightful culinary experience.

Ingredients:

  • 1 cup rice flour
  • 1 cup coconut milk
  • 1/2 cup water
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon salt
  • 1/2 pound shrimp, peeled and deveined
  • 1/4 pound pork belly, thinly sliced
  • 1 cup bean sprouts
  • 4 green onions, chopped
  • Vegetable oil for frying
  • Lettuce leaves and herbs (mint, cilantro, Thai basil) for serving

Instructions:

  1. In a mixing bowl, combine rice flour, coconut milk, water, turmeric powder, and salt. Whisk until smooth and let the batter rest for 30 minutes.
  2. Heat a non-stick skillet over medium heat and add a drizzle of vegetable oil.
  3. Place a few shrimp and pork slices in the skillet and cook until they turn golden brown and crispy. Remove from the skillet and set aside.
  4. Pour a ladle of the batter into the skillet and quickly tilt the pan to evenly spread the batter. Cook for 2-3 minutes until the edges become crispy.
  5. Add a handful of bean sprouts and green onions onto one side of the pancake. Fold the pancake in half and gently press it down.
  6. Cook for another minute, then transfer the Banh Xeo onto a serving plate. Repeat the process with the remaining batter and fillings.
  7. Serve the Banh Xeo hot with lettuce leaves and a plate of fresh herbs, and this dipping sauce.
