Introduction to Banh Xeo
Banh Xeo is a popular Vietnamese dish that is loved for its crispy texture and rich, savory flavors. This traditional Vietnamese pancake is made with a rice flour batter, filled with a tasty combination of shrimp, pork, bean sprouts, and green onions. Served with fresh lettuce and herbs, dipped in a tangy fish sauce, Banh Xeo is a delightful culinary experience.
Ingredients:
- 1 cup rice flour
- 1 cup coconut milk
- 1/2 cup water
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon salt
- 1/2 pound shrimp, peeled and deveined
- 1/4 pound pork belly, thinly sliced
- 1 cup bean sprouts
- 4 green onions, chopped
- Vegetable oil for frying
- Lettuce leaves and herbs (mint, cilantro, Thai basil) for serving
Instructions:
- In a mixing bowl, combine rice flour, coconut milk, water, turmeric powder, and salt. Whisk until smooth and let the batter rest for 30 minutes.
- Heat a non-stick skillet over medium heat and add a drizzle of vegetable oil.
- Place a few shrimp and pork slices in the skillet and cook until they turn golden brown and crispy. Remove from the skillet and set aside.
- Pour a ladle of the batter into the skillet and quickly tilt the pan to evenly spread the batter. Cook for 2-3 minutes until the edges become crispy.
- Add a handful of bean sprouts and green onions onto one side of the pancake. Fold the pancake in half and gently press it down.
- Cook for another minute, then transfer the Banh Xeo onto a serving plate. Repeat the process with the remaining batter and fillings.
- Serve the Banh Xeo hot with lettuce leaves and a plate of fresh herbs, and this dipping sauce.
